Lamb Shanks in Slow Cooker Recipe

Ingredients
- 5 lamb shanks
- 2 tbls oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tbls tomato paste
- 1 Cup red wine
- 2 cups beef broth
- 2 twigs of rosemary
- 2 twigs of thyme
- 2 bay leaves
- salt and pepper to taste

Directions
Heat the oil in a large skillet over medium-high heat.
Season the lamb shanks with salt and pepper and brown them on all sides in the skillet.
Transfer the lamb shanks to your slow cooker.
Add the chopped onion to the skillet and cook for 5 minutes.
Add the garlic and tomato paste and cook for an additional minute.
Add the red wine and beef broth, and bring to a boil.
Pour the mixture over the lamb shanks in the slow cooker.
Add the rosemary, thyme, bay leaves, and more salt and pepper to taste.
Cover the slow cooker and cook on low for 6-8 hours, or until meat is tender and off the bone.
Once the shanks are done, remove them from the slow cooker and arrange them on a serving plate.
Strain the juice into a saucepan and discard the solids.
Heat and cook the liquid until it thickens and reduces to a gravy-like consistency.
Serve the lamb shanks poured overwith the cooking liquid.
