Mole Poblano Mexican chicken with chocolate sauce
Mole Poblano is a delicious Mexican specialty that I regularly prepare for my family. Chicken thighs are braised in a spicy sauce with chocolate which makes this dish so special . Try this interesting recipe with chicken from Mexico cuisine you will love it !
Ingredients
- 2 Chicken thighs And breast
- 4 Ancho Guajillo, Pasilla chilies
- 1⁄2 Cup sesame seed
- 1⁄2 Cup Peanuts
- 1⁄2 cinnamon stick
- 2 whole Cloves
- 3 black Peppercorns
- 1⁄2 Teaspoon anise seed
- 2 tomatoes
- 1 medium onion
- 3 cloves of garlic
- 1 Slice toast bread
- 1⁄2 Board Chocolate very dark
- 2 Cups chicken stock cube
- salt to taste
- 3 Tablespoon vegetable oil
- Coriander to serve

Directions
In the mole poblano recipe, start by roasting the chilies in a large pan without oil until they are fragrant and their color has changed slightly. This step intensifies the flavor and is the determining factor in the aromatic profile of the mole. Be careful not to burn the chilies.
In a separate pan, toast the sesame seeds, peanuts, cinnamon stick, cloves, pepper and anise seeds until fragrant. Be careful, because these spices can burn quickly.
Place the chilies, spices, tomatoes, onion and garlic in a blender and blend to a paste.
Toast the slice of bread and add it to the blender. This will give the sauce a nice texture.
Sauté the paste in a pan with hot oil and then add the chocolate. Once melted, add the chicken broth. Let the mixture boil and reduce to a minimum until it reaches a thick consistency.
Add the chicken to the sauce and simmer for 40 minutes. It will become so juicy and tender that it will fall right off the bone.
