Muesli cookies for breakfast kids
I love this recipe for muesli cookies. They are delicious, healthy and so easy to make that even my children like to make them themselves. They are perfect for breakfast, a snack in between meals or an afternoon sweet treat. I've actually made this recipe several times and am delighted to be able to share it with you now!
Ingredients
- 2 Cups oat flakes
- 1 Cup all-purpose flour
- 1 Teaspoon baking soda
- A pinch of salt
- 1⁄2 Cup With
- 1⁄4 Cup Unsweetened apple sauce
- 1 large egg
- 1 Teaspoon vanilla essence
- 1 Cup Mixed dried fruit and nuts

To bake the muesli cookies recipe, preheat your oven to 175°C and prepare a baking tray lined with baking paper. This prevents the cookies from sticking and makes cleaning up afterwards much easier.
In a large bowl, mix together the rolled oats, flour, baking powder and salt. I find it's important to mix these dry ingredients first to make sure they are evenly distributed.
In a second bowl, mix the honey, applesauce, egg and vanilla extract. The honey helps to sweeten the cookies, while the applesauce and egg help to bind the ingredients together.
Add the wet ingredients to the dry ingredients and mix until everything is well combined. Then fold in the dried fruit and nuts. I love using mixed fruits and nuts to make the cookies interesting and delicious! For even more flavor and texture, try different combinations of dried fruits and nuts. Raisins, cranberries, chopped dates and walnuts are all great options.
Use an ice cream scoop or spoon to scoop the dough onto the prepared baking sheet. Bake the muesli cookies for 10-12 minutes or until golden brown. These muesli cookies are perfect as a quick snack when you're on the go, or as a tasty accompaniment to your morning coffee or tea. Serve them with fresh fruit to your children for a balanced breakfast.
