Pasta with Spinach, Sundried Tomatoes, and Cheese
A simple but tasty recipe for pasta with spinach, sundried tomatoes, and cheese. Ideal for a quick lunch or dinner.
Ingredients
Pasta
- 400 g Spaghetti pasta
Filling
- 200 g Sun-dried tomatoes in oil
- 200 g fresh spinach
- 150 g cheese
- 2 cloves garlic
- 3 spoons olive oil
- 1 pinch Sun
- 1 pinch pepper

Directions
Cook the pasta according to the instructions on the package. Drain, keeping some of the cooking water.
While the pasta is cooking, prepare the filling. In a skillet, heat up some olive oil, add chopped garlic and fry until it turns golden.
Add the sun-dried tomatoes and fry for a minute. Then add the spinach and fry until it softens. Finally, add the cheese and season with salt and pepper.
Add the drained pasta to the pan with the filling. Mix everything together, adding some pasta cooking water if needed.
Serve the hot dish with the addition of freshly ground pepper and extra feta cheese on top.
