Directions
In a large mixing bowl, whisk together the flour, sugar, yeast, and salt.
In a separate bowl, combine the warm milk, softened butter, vanilla extract, and eggs. Mix well until all the ingredients are fully incorporated.
Gradually add the wet ingredients to the dry ingredients. Stir until the dough comes together.
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes, or until the dough becomes smooth and elastic.
Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour. The dough should double in size.
Once the dough has risen, punch out any air. Roll out the dough on a floured surface to a thickness of about ½ inch.
Use a round cookie cutter (approximately 3 inches in diameter) to cut out circles from the rolled-out dough. Place the circles on a baking sheet lined with parchment paper. Re-roll any scraps and repeat the process until all the dough is used.
Cover the dough circles with a clean kitchen towel and let them rise for another 30-45 minutes.
Heat vegetable oil in a deep saucepan or fryer to a temperature of 350°F (175°C).
Carefully place a few dough circles into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, until they turn golden brown. Remove the doughnuts with a slotted spoon and drain them on a paper towel plate.
Allow the doughnuts to cool slightly before filling. Fill a piping bag fitted with a long, thin nozzle with your favorite jam. Insert the nozzle into each doughnut and gently squeeze until they are filled with jam Repeat the process with all the doughnuts.
Dust the jam-filled doughnuts with powdered sugar and serve immediately.
