Pickled cucumber salad
Pickled cucumber salad with apple and vegetables is one of my favorite recipes for a quick and healthy snack. The diced pickled cucumbers pair well with the sour apple, and the addition of vegetables gives the salad a lightness.
Ingredients
- 4 pcs sour pickles
- 1 pcs Big apple
- 1 pcs red bell pepper
- 1 pcs Average carrot
- 1 pcs onion
- 1 tooth garlic
- 2 spoons sunflower oil
- salt and pepper to taste

Directions
First wash and dry all the vegetables and the apple. Such preparation of the ingredients will make your further steps easier.
Dice the pickled cucumbers, apple and red bell pepper. My experience tells me that it is best to do this small dice so that the ingredients blend better together.
Grate the carrots and onions on a medium mesh grater - this will give the salad a better texture. Remember not to grate the onions on too small a mesh.
Finely chop the garlic and add it to the salad. I think garlic adds a unique flavor, but if you are not a fan of this ingredient, you can omit it.
Now add sunflower oil to the salad, salt and pepper to taste and mix everything well. If you like, you can also add a little pickle vinegar - this will add an extra pickle note to the salad.
Serve the salad immediately after preparation. Remember to serve it chilled, then it tastes best.
