- 2 cups cooked white rice
- 2 tablespoon vegetable oil
- 1 Cup mixed vegetables (carrots, peas corn)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 eggs, beaten
- 2 tablespoon soy sauce
- salt and pepper to taste

1. Step
Heat the vegetable oil in a non-stick pan over medium heat.

Add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.

Add the mixed vegetables and stir-fry for 2-3 minutes until they are tender.
4. Step
Push the vegetables to one side of the pan and pour the beaten eggs on the other side. Scramble the eggs until they are cooked and then mix them in with the vegetables.

Add the cooked white rice to the pan and stir-fry everything together for another 2-3 minutes.

Add the soy sauce, salt, and pepper. Stir to combine.
