Quick & Easy Seafood Medley Stir Fry
This is one of my favorite quick and easy home-cooked meals - a beautiful seafood stir fry. It's a healthy offering, packed with essential nutrients from an assortment of veggies and seafood.
Ingredients
- 400 gms Mixed Seafood (Squid, Prawns Scallops)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 Yellow Onion, sliced
- 2 spring onions, sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 2 tbls vegetable oil
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- salt and pepper to taste
- 1 teaspoon Cornflour mixed with one tablespoon of Water
- Steamed rice for serving

Start by preparing all your ingredients - slice the vegetables and mince the garlic and ginger. This is a quick-cooking stir fry, and having everything ready to go will ensure a smooth cooking process. In my experience, prepping everything beforehand yields the best results.
Heat a large frying pan or wok over medium-high heat. Add the vegetable oil, followed by garlic and ginger. Fry these for about a minute until fragrant. Remember, you're setting the flavor base for your stir fry here, so don't rush this step.
Add the onions and bell peppers, and stir fry for about 2-3 minutes, or until they begin to soften. The secret to a good stir fry is maintaining a high heat throughout the cooking, so don't get tempted to lower the heat.
Add the mixed seafood to the pan and stir well. Be careful not to overcook them as they can quickly become rubbery. Three minutes is usually enough for most seafood.
Stir in oyster sauce, soy sauce, salt, and pepper. Then add the cornflour mixture, which will help thicken up the sauce and give it a restaurant-quality shine.
Finally, add the sliced spring onions and give it one last stir.
Serve over steamed rice, and enjoy your homemade seafood stir fry.
