Quick Fried Sesame Prawn Toast

Ingredients
- 400 g raw peeled prawns, deveined
- 1 large egg white
- 1 tablespoon cornflour
- 2 green onions, finely chopped
- 1 teaspoon finely grated ginger
- 100 g white sesame seeds
- 8 slices of white bread
- Salt, to taste
- 4 tablespoon vegetable oil, for frying
- Soy Sauce, for serving

Directions
Start by chopping the prawns into a paste-like consistency. You can use a food processor for this task.
In a bowl, combine the prawn paste, egg white, cornflour, chopped green onions, ginger, and salt. Mix until the ingredients are well-combined.
Trim the crusts off the bread slices and cut them into triangles or rectangles.
Spread the prawn mix evenly onto one side of each bread slice.
Sprinkle the sesame seeds over the prawn mix.
Heat the vegetable oil in a frying pan over medium-high heat.
Once the oil is hot, carefully place the slices, prawn side down, into the pan.
Cook until golden brown. This should take about 2-3 minutes.
Flip the toasts and cook the bread side until it's crispy and golden.
Remove the toasts from the pan and place them on a plate lined with kitchen paper to absorb excess oil.
Serve your sesame prawn toast with soy sauce for dipping. Enjoy!
