- 1⁄2 mug Of aquafaba
- 2 teaspoons sugar
- 1 tablespoon Dijon mustard
- 1 tablespoon of white vinegar
- 1 mug Of neutral vegetable oil

1. Step
First, whizz the aquafaba in a food processor until completely frothy.
2. Step
Then add the sugar, mustard and vinegar and continue whisking.
3. Step
Start adding the oil in a thin trickle while continuing to whisk. This may require a little patience, but trust me, the results are worth it.
4. Step
Once you have added all the oil, taste the mayonnaise and adjust the salt as needed.

Refrigerate the mayonnaise in an airtight container for later use.
