Rustic minced meat stew
This robust, hearty stew has been our lifeline on cold winter days more than once. The freshness of the vegetables and potatoes, combined with the hearty note of minced meat, makes for a delicious combination. Add toast or a fresh baguette and the day is saved. Every spoonful reminds me of the many times we have prepared and enjoyed this dish with joy and enthusiasm.
Ingredients
- 500 g Mixed minced meat
- 4 carrots
- 3 Potatoes
- 2 Onions
- 2 cloves of garlic
- 1 red paprika
- 1 l chicken stock cube
- 2 Tablespoon tomato paste
- 1 Tablespoon ground sweet paprika
- salt and pepper to taste
- Olive oil for frying
- Parsley to garnish

Directions
To prepare the minced meat stew, wash the carrots, potatoes and peppers and cut into bite-sized pieces. I recommend not cutting the potatoes too small so that they don't fall apart in the stew.
Heat the olive oil in a large pan and fry the mince in it. Experience has shown that olive oil is better than other oils as it adds a good flavor to the dish.
Now finely chop the onion and garlic and add to the mince. As soon as the onions are translucent, stir in the tomato purée and fry.
Now add the chopped vegetables, chicken stock and paprika. Stir everything together well and then cover and cook over a medium heat for 30 minutes. Stir the stew occasionally.
Finally, add salt and pepper and mix everything well again. Always season the stew to taste, as the amount of spices can vary.
The rustic minced meat stew is served hot and garnished with parsley. I think the fresh herbs add to the rustic charm of the stew.
