Salad of raw beetroot
This salad of raw beetroot, apple and carrots is one of my favourite quick and healthy meals. It's packed with vitamins and fibre and its beautiful bold colour makes it very appealing to the eye.

- 1 Red turnip
- 2 pcs carrots
- 2 pcs apples
- 2 spoons lemon juice
- 2 spoons olive oil
- salt
- freshly ground black pepper

1. Step
First, peel and grate the raw beetroot, carrots and apples on a grater.
2. Step
Then in a bowl, mix the grated beets, carrots and apples with the lemon juice and olive oil. It is important to use the lemon juice immediately after grating the apples so that they do not darken.
3. Step
Finally, season the salad with salt and freshly ground black pepper to taste.
4. Step
Let the salad stand for a while before serving to allow the flavours to mingle. You can serve it on its own or as a side dish with meat.
