Sensational Risotto with mushrooms
One of my favorite dishes is mushroom risotto, mainly for its authentic flavor and creamy texture. This Italian dish is extremely versatile and comforting, a tasty delight to share at any gathering. Every time I prepare it, it transports me to beautiful Italy in every bite.
Ingredients
- 1 liter of chicken broth
- 2 cdas of olive oil
- 400 grams Arborio rice
- 200 grams of mushrooms
- 1 diced onion
- 2 glasses of dry white wine
- 100 grams butter
- 100 grams grated parmesan
- salt and pepper to taste

In a medium saucepan, heat the chicken broth over medium heat until hot. It is not necessary to bring the broth to a boil; simply keeping it hot will help the rice cook evenly.
While the broth is heating, in a large skillet, heat the olive oil over medium heat. Add the onion and cook until translucent, this will help it release all its aromas.
Add the mushrooms to the pan and cook until golden brown. Remember, it is best not to move the mushrooms too much so that they brown properly.
Add the rice to the pan and stir until well coated with the oil. This step is very important to seal the grains and ensure that the risotto has a perfect texture.
Add the wine to the pan and stir until it has evaporated. The wine will give an acidic flavor to the risotto, which will contrast nicely with the creaminess of the cheese and mushrooms.
When the wine has evaporated, begin adding the hot broth to the pan, one cup at a time, stirring frequently.
Continue this process until all the broth has been used and the rice is creamy and cooked.
Remove the pan from the heat and add the butter and Parmesan cheese. Stir until well integrated and the risotto is creamy.
Season with salt and pepper to taste.
