Simple Flaky Italian Almond Biscuit
This Italian Biscuit recipe is subtly sweet, slightly soft, and delightfully crunchy. It's the perfect biscuit for any occasion - breakfast, dessert, or an in-between snack!
Ingredients
- 11⁄2 Cup of all-purpose flour
- 1⁄2 Cup of sugar
- 11⁄2 spoon baking powder
- A pinch of salt
- 1⁄2 Cup Unsalted Butter (room temperature)
- 2 large eggs
- 1 spoon vanilla essence
- Zest of one lemon
- 1⁄4 Cup of sliced almonds

Preheat the oven to 350°F. Line a bakingsheet with parchment paper, a little trick I learned to prevent the biscuits from sticking to the pan and making an easy cleanup.
In a large bowl, mix the dry ingredients - flour, sugar, baking powder, and salt.
In another bowl, whisk together the butter, eggs, vanilla essence, and lemon zest until creamy. A piece of advice, always have your ingredients at room temperature for better mixing results.
Gradually add the dry ingredients into the wet mixture. Gently fold in the mixture until the dough comes together.
Once the dough is ready, add the sliced almonds. The almonds give a nice, crunchy texture and a beautiful look to the biscuits.
Divide the dough into equal halves and with lightly floured hands, shape each half into logs. Place them on the prepared baking sheet.
Bake the logs for about 15-18 minutes, or until light golden brown. Keep an eye on them after the 10-minute mark as oven temperatures can vary.
After baking, let the logs cool for a bit before slicing into individual biscuits.
