Simple Fresh Creamy Pesto Salad Dressing
Being the lover of salads and all things leafy greens that I am, I’ve found that a good dressing can make or break your salad experience. I've made this Pesto Salad Dressing several times and have been delighted every time at the burst of fresh and zesty flavor it adds to my salads. It's the right balance of herb and citrus that makes it polished and restaurant-standard. Plus, it's a great way to use up the excess pesto I usually have left after pasta nights!
Ingredients
- 1 Cup fresh basil leaves
- 1⁄2 Cup Parmesan cheese, grated
- 1⁄2 Cup olive oil
- 1⁄4 Cup pine nuts
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- salt and pepper to taste

Start by placing the fresh basil, Parmesan cheese, olive oil, pine nuts, and minced garlic into a food processor. It’s important not to rush this part, take your time to clean and dry your basil leaves properly. Using wet basil leaves can dilute the flavor.
Process these ingredients until they consistently form a smooth, green paste — this is your homemade pesto and the star of your dressing. Then, squeeze your lemon into the mix. A little tip from my kitchen, rolling your lemon before squeezing makes it easier to extract juice.
Finally, season with salt and pepper. Your Pesto Salad Dressing is ready!
