Simple "Schütteltorte" with fruit
This homemade Schütteltorte is a real treat. I've made the cake several times for my family and friends and each time it's been an absolute hit. One advantage of this recipe is that it's really simple - just throw all the ingredients together and mix them, hence the name "Schütteltorte" The combination of the sweet cake, the light cream and garnished with fruit is simply irresistible!
Ingredients
For the cake base :
- 200 g sugar
- 250 g flour
- 4 Eggs
- 150 ml oil
- 150 ml milk
- 1 Packet baking soda
- 2 Packet vanilla sugar
- pinch of salt
For the cream:
- 200 ml cream
- 400 gr Quark
- 2 Packet vanilla sugar
- 2 Tablespoon sugar
- Fresh berries and fruit to garnish

Directions
To bake the Schütteltorte, first preheat the oven to 180 degrees. I always recommend greasing the baking tray beforehand or lining it with baking paper to prevent the cake from sticking.
Then mix all the dry ingredients (sugar, flour, baking powder, vanilla sugar and salt) in a large bowl.
Add the eggs, oil and milk. Now comes the part that gives this cake its name: Shake the bowl vigorously or use a mixer until all the ingredients are blended into a smooth batter.
Pour the batter onto the baking tray and bake in the preheated oven for about 25-30 minutes until the top is golden brown. A good trick to check if the cake is done is to insert a toothpick into the center. If it comes out clean, the cake is done!
While the cake is baking, you can prepare the cream. Whip the cream until stiff and mix it with the quark, vanilla sugar and sugar. I recommend draining the quark beforehand so that the cream doesn't become too thin.
When the cake has cooled, spread the cream evenly over the surface and garnish the cake with fresh fruit and berries. Now the cake is ready to be served! Tip: This cake tastes even better if it is left to stand in the fridge overnight.
