Sticky Ham Glaze with Marmalade

1. Step

Preheat your oven to 180°C (350°F). While the oven is heating up, make sure to place the ham on a rack in a roasting pan and lightly score the top. Scoring the ham allows the glaze to penetrate more deeply for an even richer flavor. Once done, season the ham lightly with salt and pepper.

2. Step

In a medium saucepan, combine the orange marmalade, brown sugar, honey, Dijon mustard, vinegar, ground cinnamon or allspice and orange juice. Cook on a medium heat while stirring frequently, until you attain a smooth and thick consistency. This process allows the sugar to dissolve and the flavors to meld together perfectly.

3. Step

Remove the glaze from the heat and allow it to cool slightly. With a culinary brush, apply a generous amount of this glaze all over the ham. Don't be shy with the glaze- remember, it's this coating that gives the ham its winning flavor.

4. Step

Roast the glazed ham in the preheated oven. Whilst roasting, periodically baste the ham with the marmalade glaze every 15 minutes. This commonly overlooked step ensures the flavor penetrates properly and the ham remains moist. Roast the ham for about two hours, or until cooked through.

Finally, rest the ham for about 15 minutes before carving. Resting allows the juices to redistribute throughout the ham, making it moister and more flavorful.
