Directions
Preheat the oven to 180 degrees and prepare a baking tray with baking paper, which is essential to obtain the desired result.
In a bowl, beat the eggs with the sugar until you get a frothy cream. Here's a trick: if you beat the eggs until they double in size, you will get a fluffier texture.
Stir in the sifted flour in an enveloping way, to integrate it without losing the air in the batter.
Spread the dough on the baking sheet and bake for approximately 10-15 minutes.
While the cake is in the oven, moisten a clean kitchen towel and sprinkle it with sugar. When removing the cake from the oven, turn it out onto the cloth and carefully roll it up, helping yourself with the cloth. Let it cool completely.
For the filling, whip the cream with a little sugar. Carefully unroll the sponge cake, spread it with the jam and then with the whipped cream. Roll it up again very carefully.
Before serving, sprinkle with powdered sugar and decorate with some red fruits. This will give it a refreshing Christmas touch.
