Tasty Tofu and Vegetable Stir-Fry (Low-Calorie Version)

Ingredients
- 200 gms of firm tofu, drained and cubed
- 2 tablespoon of olive oil
- 1 Medium Sized Red Bell Pepper, sliced
- 1 Medium Sized Green Bell Pepper, sliced
- 1 Medium Sized Onion, sliced
- 2 cloves of garlic, minced
- 1 Medium Sized Carrot, julienned
- 2 cups of broccoli florets
- 1 tablespoon of low-sodium soy sauce
- 1 tablespoon of Hoisin sauce
- salt and pepper to taste
- Spring onions for garnish

Directions
Start by heating 1 tablespoon of olive oil in a large pan or wok over medium heat.
Add in the tofu and fry until it turns golden brown on all sides. Once done, remove the tofu from the pan and set it aside.
Using the same pan, add another tablespoon of olive oil and toss in the garlic, onions, red and green bell peppers, carrots, and broccoli. Stir-fry until the vegetables are tender yet crispy.
Return the cooked tofu to the pan and mix it well with the vegetables.
Mix in the low-sodium soy sauce and hoisin sauce. Stir everything together well so all the items get coated with the sauces.
Season with salt and pepper according to taste, and cook for another 2-3 minutes.
