- 600 gr porcini mushrooms
- 300 gr potato
- 60 gr leek
- Chopped fresh parsley
- salt and pepper
- Extra Virgin Olive Oil
- 1 l vegetable stock cube

Wash and finely chop the leek.
Peel and cut the potatoes into cubes.
Clean the mushrooms and cut into cubes.
In a saucepan, fry the leek with a pinch of extra virgin olive oil. Add the diced potatoes, cook for a couple of minutes, add the mushrooms and season with salt.
Cover and continue cooking for a couple of minutes over low heat.
Raise the heat, and add pepper and the vegetable stock. Cook with the lid half-open for about 20 minutes on medium heat.
Blend all the ingredients with a blender until smooth.
Turn off the heat and stir for 30-40 seconds. Cover and leave to rest for two minutes before serving.
The creamy mushroom sauce is ready! It is the ideal accompaniment to steak.
