Directions
Start by flattening the chicken breasts. Place each chicken breast in between 2 sheets of plastic wrap and flatten using a meat tenderizer or rolling pin until it is about 1/4 inches thick.
Set up a breading station. Place the flour in one shallow dish, the eggs in a separate dish, and the breadcrumbs in another dish. Season each of them with salt and pepper.
Dredge each chicken breast in the flour, shaking off any excess. Then dip it into the eggs and finally, coat it with the breadcrumbs. Make sure each piece is well-coated.
In a large frying pan, heat up the vegetable oil over medium-high heat. Once the oil is hot, add the chicken breasts one at a time. Fry them for about 3-5 minutes on each side until they are golden brown and crispy.
Once cooked, remove from the oil and place on a paper towel to remove any extra oil.
To serve, cut the schnitzels into slices, and serve with wedge of lemon. Just before eating, squeeze the lemon over the schnitzel for a pop of freshness.
