Vegan Christmas cookies without egg
There's nothing better than the smell of freshly baked cookies wafting through the whole house. Ever since I tried these vegan Christmas cookies without eggs, I bake them every year. Not only are they delicious, but they only need a few ingredients and are very easy to make. See for yourself!
Ingredients
- 200 g self-rising flour
- 100 g sugar
- 150 g Vegetable margarine
- 50 g ground almonds
- 1 Teaspoon vanilla essence
- 1 Pinch salt
- Powdered sugar for dusting

Directions
To make vegan Christmas cookies without eggs, first make a dough from flour, sugar, margarine, ground almonds, vanilla extract and salt. It is important to work quickly so that the margarine does not become too soft. You will notice that the dough is a little crumbly at first, but don't be discouraged - it will become nice and smooth after a few minutes of kneading.
Wrap the dough in cling film and place in the fridge for at least an hour. This step is crucial, as chilling the dough makes it easier to roll out and cut later.
Preheat the oven to 180 degrees and line two baking trays with baking paper.
Then roll out the dough on a floured work surface. I recommend a dough thickness of around 5mm, as this will make the cookies nice and crumbly and they will keep their shape when baked.
Now cut out shapes with cookie cutters and place on the prepared baking trays. Do not overfill the baking tray, as the cookies will rise a little and need space.
Bake the cookies in the preheated oven for about 10-12 minutes until golden brown. Always keep an eye on them, as every oven is different and the baking time can vary.
Remove the baked cookies from the tray and leave to cool completely on a wire rack.
Finally, dust the vegan Christmas cookies with powdered sugar and they are ready to serve!
