Vegetable meatball soup
In my kitchen, traditional Hungarian flavours always come to the fore. Vegetable meatball soup is a classic Hungarian dish that I learned from my grandmother and have been making regularly for years. It's ideal especially on cold winter days, it's very filling and doesn't require much time in the kitchen.
Ingredients
- 500 g minced meat
- 200 g carrot
- 200 g parsley
- 2 pc medium sized potatoes
- 1 pc onion
- 2 Cloves garlic
- 2 egg
- 2 tablespoon breadcrumbs
- salt
- pepper
- red peppers
- 2 l water

Directions
First, take the minced meat, add 2 eggs, breadcrumbs, salt, pepper and red pepper. Mix well and leave to stand for a while to allow the flavours to blend.
Meanwhile, peel the vegetables and cut into small cubes. Finely chop the onion and garlic. In a large pan, start sautéing the onion and add the vegetables. It is important not to let it burn, as this will make the soup bitter.
Then add water and simmer for about 20 minutes. Meanwhile, make small dumplings from the minced meat. When the vegetables are ready, add the meatballs. Cook for another 20 minutes, then season with salt and pepper to taste.
