Winter salad with roasted nuts and goat's cheese
This winter salad is one of my favorite dishes in the cold season. The combination of crunchy lettuce, hearty goat's cheese and crunchy roasted nuts not only offers an extraordinary taste experience, but is also a visual highlight. I have made this recipe so many times for my family and friends and it always gets rave reviews.
Ingredients
- 200 g Mixed salad (e.g. lamb's lettuce and radicchio)
- 100 g goat cheese
- 100 g walnuts
- 2 apple
- 1 red onion
- 2 tbsp With
- 3 tbsp balsamic vinegar
- 5 tbsp olive oil
- salt and pepper

For the winter salad, wash the lettuce thoroughly and spin dry. I always recommend drying the salad really well so that the dressing adheres well and the salad doesn't get soggy.
Roughly chop the walnuts and roast in a hot pan without fat. The flavor of the nuts is best developed if you roast them first. But be careful, they quickly become too dark, so keep at it.
Wash the apples, remove the cores and cut into thin slices. Peel the onion and cut into rings.
For the dressing, whisk together the honey, vinegar, olive oil, salt and pepper. I recommend adding the dressing to the salad before serving so that it stays nice and crunchy.
Roughly crumble the goat's cheese and mix into the salad. Finally, add the roasted nuts and the dressing and mix well. Your delicious fresh winter salad is ready!
