Lemongrass has an intoxicating aroma that is a staple in Vietnamese cooking. Ingredients
- 500 gms of chicken thigh fillets
- 3 Stems of fresh lemongrass
- 3 cloves of garlic
- 2 red chilies
- 2 tbls fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 teaspoon ground black pepper
- 2 tbls vegetable oil
- Fresh cilantro for garnishing
- Lime wedges for serving

Begin by mincing the lemongrass, garlic, and chilies. Mince well until they look almost like a paste.
Transfer the paste into a mixing bowl. Add fish sauce, soy sauce, sugar, and black pepper. Stir to combine.
Put the chicken into the bowl, mix it well with the sauce and let it marinate for 2 to 4 hours.
Heat the vegetable oil in a pan over medium heat. Add the mar chicken.
Pan-fry the chicken until it turns golden brown and the inside is cooked (approximately 15 minutes).
Transfer the cooked chicken to a serving plate, garnish with fresh cilantro.
Serve the Vietnamese Lemongrass Chicken with a wedge of lime on the side. Squeeze the lime over the chicken before eating for an extra tangy flavor.
