Classic Crispy Fried Chicken Croquettes

Ingredients
- 500 gms of ground chicken
- 2 large potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1⁄4 Cup fresh parsley, finely chopped
- 1⁄2 Cup of all-purpose flour
- 2 eggs, beaten
- 2 cups of bread crumbs
- salt and pepper to taste
- Vegetable oil for frying

In a pan over a medium heat, add a tablespoon of oil and sauté the onions and garlic until they turn translucent.
Add the ground chicken to the pan, season with salt and pepper. Cook until the chicken is done.
In a large bowl, combine the cooked chicken, mashed potatoes, and parsley. Mix well.
Shape the mixture into small, dome-shaped patties.
Dip each patty into flour, then into the beaten eggs, and finally coat them evenly with the breadcrumbs.
