Crispy Tofu Lettuce Wraps with Peanut Sauce

- 1 Block of extra-firm tofu, drained and cubed
- 1 tablespoon of olive oil
- salt and pepper to taste
- A head of lettuce, leaves separated
- 1 large carrot, shredded
- 1 red pepper, thinly sliced
- 1⁄2 Cup of fresh cilantro
- 1⁄2 Cup of crushed peanuts
- 2 green onions, chopped
For the sauce:
- 1⁄4 Cup of soy sauce
- 2 tbls of rice vinegar
- 1 tablespoon of sesame oil
- 1 tablespoon of maple syrup
- 1 teaspoon of freshly grated ginger

Directions
Start by heating the olive oil in a large non-stick skillet over medium-high heat.
Season the tofu cubes with salt and pepper and add to the hot pan. Cook the tofu, stirring occasionally, until all sides are golden and crispy, about 15 minutes. Remove from heat and set aside.
In a small bowl, whisk together all the ingredients for the sauce. Taste and adjust seasoning as needed.
To assemble the wraps, take a lettuce leaf and top it with a few pieces of the cooked tofu, shredded carrots, sliced red peppers, a sprinkle of crushed peanuts, and a handful of fresh cilantro. Drizzle over some of the sauce and sprinkle chopped green onions on top.
Repeat with the rest of the lettuce leaves and serve immediately.
