Directions
First, you need to clean the fish and cut it into medium-sized pieces. In my experiences, I found that the pieces should not be too small to prevent them from falling apart in the stew.
Heat the olive oil in a casserole over medium heat. Add the chopped onion, chopped garlic, red bell pepper strips and thinly sliced carrots. Cook until the vegetables are tender, about 10 minutes. This step is essential to obtain a robust flavor base for your fish stew.
Add the chopped tomato and parsley and cook for 5 more minutes.
Then, add the fish and brown it on both sides, being careful not to break it. My advice here is to give it about 2 minutes on each side.
After browning the fish, pour the white wine and leave the mixture over medium heat until the alcohol evaporates. It is vital to give it this time so that the flavor of the wine integrates without the bitter touch of the alcohol.
Finally, add the fish stock, salt and pepper to taste. Simmer for about 15 to 20 minutes until the stew is reduced to the desired consistency.
Now it's ready to serve! Enjoy it with crusty bread and a glass of white wine. With my suggestions and your personal touch, you'll see how cooking this fish stew can be a fun and rewarding experience. Enjoy!
