Easy Indian Chicken Coconut Curry

Ingredients
- 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 2 teaspoons turmeric powder
- 1 can coconut milk
- 1 Cup chicken broth
- 1 tablespoon tomato paste
- 1 tablespoon brown sugar
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 Cup Green peas
- Salt and pepper, to taste
- Fresh cilantro, chopped

Directions
In a large skillet, heat the oil over medium heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the skillet and set it aside.
In the same skillet, add the onion and cook until softened, for about 3 minutes. Add the garlic and ginger, and cook for another minute.
Add the curry powder and turmeric powder, and cook for a minute until fragrant.
Add the coconut milk, chicken broth, tomato paste, and sugar, and whisk well until combined.
Add the sliced bell peppers and green peas and stir well. Bring the mixture to a simmer, and let it cook for about 10 minutes, stirring occasionally.
Season with salt and pepper, to taste.
