Ingredients
- 1 large carrot, grated
- 1 large zucchini, grated
- 1 large onion, finely chopped
- 1 Cup grated cheese
- 1 Cup self-raising flour
- 5 eggs
- Salt & black pepper to taste
- 1 teaspoon olive oil for greasing the pan
- A handful of chopped fresh herbs (optional)

Start by preheating your oven to 180°C (350°F). Meanwhile, grease a baking dish with olive oil.
In a large mixing bowl, combine grated carrot, zucchini, onion, cheese, and flour.
Beat the eggs well in a separate bowl. Season them with salt and black pepper.
Pour the beaten eggs into the vegetable and cheese mixture. Stir until the mixture is well combined.
Transfer the mixture to the greased baking dish, pressing it down and smoothing the surface with a spatula.
