Fresh Vietnamese Spring Roll Dipping Sauces
This Vietnamese Spring Roll Dipping Sauce offers a rich and savory combination that perfectly complements the fresh and light spring roll. It is versatile and can easily be adjusted to taste. This sauce goes well with other Vietnamese dishes too, such as vermicelli noodles and lettuce wraps.
Ingredients
- 2 cloves of garlic, minced
- 1 red chili, deseeded and thinly sliced
- 3 tbls of sugar
- 4 tbls of fish sauce (use soy sauce for a vegan option)
- 4 tbls of fresh lime juice
- 1⁄2 Cup of warm water
- 2 medium carrots, cut into matchsticks

Directions
In a small bowl, combine the minced garlic, sliced red chili, sugar, fish sauce, and lime juice. Stir until the sugar is completely dissolved.
Add warm water into the mixture and stir well to combine.
Prepare the carrots by cutting them into thin matchsticks. Then, add them into the sauce.
Let the sauce sit for at least 30 minutes before serving to allow the flavors to meld together.
After sitting, give the sauce another good stir then serve it as a dipping sauce for Vietnamese spring rolls or with other Vietnamese dishes.
