Granny's fig cookies recipe

Ingredients
Shortcrust pastry
- 1 kg self-rising flour
- 200 g lard
- 100 g butter
- 300 g sugar
- 3 egg
- 20 g dried yeast
Stuffing
- 300 g fig jam
- grated orange peel
- 1⁄2 spoon cinnamon
- 150 g toasted and chopped almonds
Icing
- 1 egg whites
- 250 g confectionery sugar
- drops lemon

Directions
Transfer the flour to a work surface, then add the lard and butter. Rub the ingredients together and mix well. Then, add the sugar.
Separate the egg yolks from the egg white. Beat the egg yolks lightly and add them to the mixture. Add the yeast and continue kneading until obtaining a smooth and compact dough. Then, let it rest for two hours.
Put the fig jam in a bowl and add the grated orange zest and almonds.
Take a small part of the dough and flatten it with a rolling pin. Create small sheets and fill them with the previously created filling. Close by joining the two edges of the dough. Bake in a preheated oven at 180°C for 15 minutes.
Mix the egg white with the icing sugar and a few drops of lemon.
Decorate the cookies with icing and sprinkle them with sprinkles of rainbow or cinnamon.
