Ingredients
- 11⁄2 lb chicken breasts
- 1⁄2 Cup self-rising flour
- 2 onion
- 11⁄2 cups beef broth
- 11⁄4 cups shredded mozzarella or gruyere cheese
- olive or vegetable oil

Slice each chicken breast in half horizontally and pound evenly to form cutlets.

Season each with salt and pepper and dredge into the flour.

Heat oil in a pan over medium-high heat and cook chicken. Cook until cooked through, about 3-4 minutes per side depending on the thickness. Remove and set aside.

Wipe the pan clean and heat about 1/4 cup of oil over medium heat. Add onions, season with salt and pepper and cook for 15 minutes, stirring occasionally. Reduce heat to medium-low and cook for 10 more minutes. The onions should have a nice caramel colour.

Add beef broth and bring to a boil. Reduce heat to medium and let simmer until thickened, about 3 minutes.

Return the chicken back to the pan. Spoon the onion mixture over the chicken and top with mozzarella cheese. Transfer to oven and broil until cheese has melted.
