Homemade KFC Style Fried Chicken Recipe

- 1 large chicken, cut into pieces
- 2 cups all-purpose flour
- 1⁄3 Cup paprika
- 1 tablespoon ground black pepper
- 1 tablespoon salt
- 1 tablespoon mixed herbs
- 1 tablespoon onion salt
- 1 tablespoon garlic powder
- 1 tablespoon mustard powder
- 2 teaspoons white pepper
- 1 egg
- 2 cups buttermilk
- 1 tablespoon hot sauce (optional)
- Oil, for deep frying

In a bowl, combine the chicken pieces, buttermilk, and hot sauce (if using). Mix well, cover the bowl, and allow to marinate in the refrigerator for at least 2 hours or overnight for best results.
Mix together the flour, spices, and salt in a large bowl. Ensure they’re well combined.
Beat the egg in a separate bowl, then add it to the dry mixture. Stir well till the egg is fully incorporated into the mixture.
Heat oil in a deep fryer or large saucepan to 175°C (350°F).
Remove chicken pieces from the buttermilk marinade, allowing excess to drip off. Roll each piece in the flour mixture, making sure it’s thoroughly coated. For extra crunch, dip the chicken back into the marinade and again in the flour mixture.
Deep fry the coated chicken pieces, a few at a time, until they’re golden brown and cooked through. This should take about 10-12 minutes for each batch. You can use a meat thermometer to ensure the chicken is done, it should register at least 74°C (165°F).
Remove the cooked chicken pieces from the oil using a slotted spoon and place them on a paper towel covered plate to drain excess oil.
Repeat the process with the remaining chicken pieces.
