Directions
Start by preheating your oven to 350°F (175°C). Lining your baking sheet with parchment paper will ensure that the cashews don't stick while they're roasting. From personal experience, this small step saves a lot of time cleaning up afterwards.
Place your cashews into a mixing bowl. You should ideally use raw cashews for this recipe, as it allows for better flavor absorption when they're being coated.
In a small saucepan over medium heat, combine your honey, melted butter, sea salt, and cinnamon. Stir this mixture continuously until it's fully blended. The aroma is heavenly - A delightful preview of what's to come.
Pour the honey mixture over your cashews and toss thoroughly making sure each cashew is well coated. Allow them to sit for about 5 minutes to soak up the glaze. This step makes sure that the flavors really penetrate the cashews.
Arrange your coated cashews on your prepared baking sheet. Try to make sure they're evenly spread out and not all clumped together. This allows them to roast evenly for the perfect crunch.
Bake those cashews in your preheated oven for around 15-20 minutes, or until they're golden brown. Be sure to stir the cashews every 5 minutes to prevent them from burning. Trust me, keep a close eye on them – it can go from perfectly roasted to burnt in a matter of minutes.
Once your cashews are beautifully golden and roasted, remove them from the oven and allow them to cool completely. As they cool they'll become crisped to perfection.
