Directions
Cook the sushi rice according to the package instructions.
While the rice is cooking, peel and cut the cucumber, carrot and avocado into long, thin strips.
When the rice is done, mix the rice vinegar, sugar, and salt, then pour it over the rice while still hot. Stir it gently to mix thoroughly and let it cool down.
Place a sheet of the Nori seaweed on a flat surface. Wet your hands to prevent sticking and spread half of the sushi rice evenly on the Nori, leaving a roughly 2cm border along the edges.
Arrange half of the cucumber, carrot, avocado, and imitation crab stick over the rice.
Carefully fold the Nori to create a sandwich, pressing down gently to secure all ingredients in place. Repeat these steps with the remaining ingredients for the second sandwich.
Use a sharp knife to cut the sushi sandwich in half, revealing the beautiful layer.
Serve your sushi sandwich with soy sauce, wasabi, and pickled ginger on the side.
