How to Make Fluffy Marshmallows Without Syrup
This recipe is simple to prepare, doesn't require syrup, and the marshmallows taste just as delightful as the store bought ones.

- 3 tbls of gelatin
- 1⁄2 Cup of cold water
- 11⁄2 cups of granulated sugar
- 1 Cup of water (additional)
- 1 teaspoon of Vanilla Extract
- 1⁄4 Cup maize starch
- 1⁄4 Cup confectionery sugar

Start by combining the gelatin and 1/2 cup of cold water in a large mixing bowl. Let it sit while you prepare the sugar solution. By allowing the gelatin to bloom, you ensure a softer texture in your final product.
Combine granulated sugar and 1 cup water in a saucepan over medium heat. Stir until the sugar is entirely dissolved. Don't be tempted to rush this step; patience is critical to achieving the perfect texture.
Bring the sugar solution to a boil and let it simmer for about 15 minutes. Be sure to control your heat as the solution can boil over if not monitored.
Once the sugar solution is ready, carefully pour it over the gelatin and begin to beat it on low speed with an electric mixer.
Gradually increase your mixer's speed to high after a minute or so, and keep whisking until the mixture becomes opaque and thick. By doing this as instructed, you ensure that your marshmallows are light and fluffy.
Add in the vanilla extract and keep whisking until fully incorporated. The authentic homemade taste truly shows up with the addition of vanilla.
Dust a square baking dish with a mixture of cornstarch and powdered sugar. This helps prevent your marshmallows from sticking to the dish.
Pour your marshmallow mixture into the dish and let it set for at least 2 hours or until firm. Resist the temptation to hasten this process, as allowing your marshmallows to set properly ensures the perfect texture.
Once set, cut your marshmallows into squares and dust them with more of the cornstarch and powdered sugar mixture to prevent sticking.
