Ingredients
Filling
- 5 cups hot water
- 11⁄4 Cup raw unsalted cashews
- 2 tablespoon plant based milk
- 11⁄2 tablespoon lemon juice
- ground black pepper
Pastry
- kataifi
- vegan butter
Syrup
- 1 Cup water
- 1 Cup Castor sugar
- brown sugar
- rose water syrup
- fresh orange juice
- lemon juice
- Lemon zest

Directions
Blend all the filling ingredients together. Move to a saucepan and start heating. The mixture should split and then come back together into a thick, stretchy, consistency. Take off the heat and let cool.

Mix the kataifi and vegan butter. Then spread half into your tin, pressing into the bottoms and sides. Pour the cheese filling in, then cover with the rest of the pastry.

Bake for 35-45 minutes. Meanwhile make the syrup, by mixing all the ingredients together over medium heat. When everything dissolves, put to the side.

Let your kunafeh cool for 10 minutes, then remove from the tin by flipping it over. Garnish with pistachio slivers, rose petals, and pour the syrup over. Serve and enjoy!
