Luxury leek soup

Leek soup is a beautiful, delicious soup that combines the flavours of leeks, potatoes and cream. Every time I make this soup, I am amazed at how simple ingredients can create such a rich and balanced flavour.

1. Step

Heat the olive oil in a saucepan over medium-high heat.

2. Step

Add the leeks and sauté for about 5 minutes so that they are soft and begin to take on a golden colour. It is important that the leeks do not burn - regular stirring will prevent this.

3. Step

Then add the potatoes, broth, salt and pepper.

4. Step

Let the soup simmer until the potatoes are soft. If you like your soups creamy, you can use a stick blender at this point and blend the soup.

Finally, add the cooking cream, stir and let it warm up for a while.
