Ingredients
- 4 cups shredded red cabbage
- 1 large carrot, shredded
- 1 red bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1⁄2 Cup Chopped fresh cilantro
- 0.3 Cup rice vinegar
- 2 tbls soy sauce (use gluten-free if needed)
- 2 tbls brown sugar
- 2 tbls Fresh Lime Juice
- 2 cloves garlic, minced
- 2 teaspoons sesame oil
- salt to taste
- 1⁄2 Cup chopped roasted peanuts for garnish
- 1 jalapeno pepper, thinly sliced (optional)

Begin by preparing all your vegetables - shred the cabbage, carrot, and thinly slice the bell pepper and onion. In my experience, using a sharp chef's knife ensures perfect slicing for your vegetables, enhancing the textural composition of the salad.
Mix the prepared vegetables in a large salad bowl with the chopped fresh cilantro.
