Roasted Beet Salad
This is a tasty and healthy salad perfect for light lunches or dinners. It is full of vitamins and minerals, thanks to the red beet, spinach and seeds. Goat cheese adds a creamy flavor which perfectly complements this salad.
Ingredients
Salad
- 4 pcs beetroot
- 200 g baby spinach
- 150 g goat cheese
- 50 g Mixture of seeds
Dressing
- 2 Spoons olive oil
- 1 Spoons White wine vinegar
- 1 pcs garlic
- 1 salt and pepper to taste

Bake the red beet in an oven preheated to 200°C for about 30 minutes, or until soft. Then let it cool and cut it into pieces.
Prepare the dressing by mixing olive oil, white wine vinegar, pressed garlic, salt, and pepper.
Mix spinach, red beet, goat cheese and seeds in a bowl. Add dressing and mix well.
Serve the salad immediately or let it sit in the fridge for the flavors to blend together.
