Savoury Spinach Feta Pie in Puff Pastry

Ingredients
- 2 letters of puff pastry
- 400 g fresh spinach leaves
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 200 g feta cheese, crumbled
- 100 g parmesan
- 2 large eggs
- 2 tbls olive oil
- 1 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 1 egg yolk (for brushing the pastry)

Directions
Preheat your oven to 200°C (400°F).
Heat the olive oil over medium heat in a large pan. Add the chopped onion and garlic, sautéing until they are soft and translucent.
Add the spinach to the pan and cook until it has wilted down. Remove from heat, and drain any excess liquid.
In a large bowl, mix together the sautéed spinach, feta cheese, Parmesan cheese, eggs, salt, and pepper until well combined.
Lay one sheet of puff pastry in a pie tin, ensuring it overlaps the sides.
Spread the spinach mixture evenly over the pastry in the pie tin.
Cover with the second sheet of puff pastry, crimping the edges to seal.
Brush the top of the pie with the egg yolk for a shiny, golden finish.
Bake for 30-35 minutes, until the pastry is golden and crisp.
Allow to cool for a few minutes before slicing and serving.
