Traditional English Christmas Trifle
This recipe is more than just a dessert, it's a tradition that brings joy to the festive season.
Ingredients
- 1 Cup of raspberries
- 1⁄2 Cup of granulated sugar
- 1⁄2 Cup of sherry
- 12 ounces of sponge cake, cut into one inch pieces
- 1 Package of strawberry-flavoured gelatin, prepared according to the instructions on the package

Start by evenly distributing the raspberries at the bottom of a trifle bowl or a deep glass serving dish. Sprinkle the sugar over the raspberries to draw out their natural juices (this will add a fruitier flavor to your trifle). Pour over the sherry and let it sit for about 10-15 minutes. In my experience, this soaking period is crucial because the fruit absorbs the sherry, creating a sweet and slightly alcoholic burst of flavor.
Next, arrange the sponge cake pieces over the raspberry-sherry mixture. Don't skimp on the sponge – remember, it's the base of your trifle, and a good base always results in a stronger structure.
Slowly pour the prepared gelatin mixture over the sponge cake until every piece is covered. This gelatin layer will provide a pleasant texture contrast. Let the dish rest in the refrigerator for the gelatin to solidify; I usually wait for about an hour.
Once the gelatin has set, you can begin layering the custard on top. This custard layer is a sweet and creamy reprieve from the tartness of the raspberries and the tangy flavor of the gelatin.
