Tropical Mango Cocktail
This delightful Tropical Mango Cocktail is undoubtedly the perfect drink for warm afternoons or balmy summer dinners.
Ingredients
- 2 ripe mangoes
- 8 fresh mint leaves
- 1⁄2 Cup White Rum
- Juice of one lime
- Sugar to taste (optional)
- ice cubes
- Club soda (optional)

Begin by peeling and pitting 2 ripe mangoes. There seems to be a plethora of ways to peel a mango, but I prefer the 'hedgehog' method — cut away either side of the stone, score without cutting through the skin and turn the slice outwards.
Now, it's the time for the key flavoring tutorial. In the blender or food processor, add the peeled mango flesh. To this, add mint leaves. Mint infuses a fresh zing that complements the sweet mangoes wonderfully, so don't skip this one if you can help it. Blend this until smooth.
In a pitcher, combine your mango-mint puree, white rum, lime juice, and sugar if using. Add a splash of club soda, if you like a lighter cocktail. Stir to combine. Experienced cocktail makers would advise that rum and lime are fast friends, enhancing the tropical schema of our drink here.
To serve, fill glasses with ice cubes. Pour your mango cocktail mix over. I always recommend using clear glasses to flaunt the bright sunny color of the cocktail. Top with more club soda if desired and garnish with a spring of mint and a slice of mango for a tropical touch.
