Vegan Italian Hearty Veggie Gnocchi Bolognese

Ingredients
- 1 Package of shelf-stable Gnocchi
- 2 tbls olive oil
- 1 finely chopped medium onion
- 2 cloves of garlic, minced
- 1 large carrot, finely chopped
- 1 stalk celery, finely chopped
- 1 medium Bell Pepper, finely chopped
- 1 can of Lentils, drained and rinsed
- 1 can of diced tomatoes
- 1 can of tomato paste
- 1 Cup of vegetable broth
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon dried oregano
- salt and pepper to taste
- Fresh basil leaves for garnish

Directions
Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, carrot, celery, and bell pepper. Sauté until the vegetables are tender, about 5-7 minutes.
Stir in the lentils, diced tomatoes, tomato paste, vegetable broth, basil, oregano, salt, and pepper. Reduce heat to low and let the sauce simmer for about 15 minutes.
In the meantime, cook the gnocchi according to the package instructions.
Once the gnocchi is cooked, drain and add it to the skillet with the sauce. Stir everything to combine and let it cook for another 5 minutes.
Serve the Veggie Gnocchi Bolognese hot, garnished with fresh basil leaves. Enjoy!
