Ingredients
- baked pie crust
- 2 spoon vanilla essence
- 11⁄3 Cup heavy cream
- 2⁄3 Cup crystal sugar
- 6 yolk
- pinch salt
- 1 tablespoon superfine sugar
- mixed berries
- whipped cream

Directions
Preheat oven to 350 degrees Fahrenheit.
Bring the heavy cream combined with half of the granulated sugar to a simmer, then remove from heat and let cool. Whisk together the remaining granulated sugar, egg yolks, and salt in a bowl. Then add vanilla extract and the cream mixture, stirring it constantly. Then pour this custard into your pre-baked crust.
Bake for 25 to 30 minutes, until the custard is set around the edges, but still shakes slightly in the center. Let cool.
Now preheat your broiler. Sprinkle the superfine sugar evenly over the pie. Broil for only 2 minutes, so the sugar caramelizes. Let stand for a few minutes, then serve with berries and whipped cream. Enjoy!
