Directions
First, preheat your waffle iron. All waffle irons might be different, but mine heats up just right within 5 minutes.
While it's heating, mix together all your dry ingredients: the flour, sugar, baking powder, and salt.
In a separate bowl, beat the egg and add milk, oil, and vanilla extract into it. A little tip from my countless time making it, ensure your milk is warm, not too hot nor too cold, this ensures that your mix blends well together.
Gradually add in your liquid ingredients to the dry ingredients, mixing until everything is just incorporated. Never over mix your bitter as it can lead to the waffles being tough and chewy rather than crispy and fluffy.
Once your waffle iron is heated, spray or lightly brush it with oil and pour your batter right in the center. Again you need to know your waffle iron for this. Some need the batter spread around, others can handle it on their own.
Allow it to cook until the indicator light switches, approximately 3-5 minutes, or until golden brown.
Carefully remove the waffle. Let it cool for a minute or two, allowing it to get that extra crispy texture that pairs perfectly with your favorite toppings. I personally love fresh fruits and a dollop of Greek yogurt, but butter and maple syrup are classic options.
