Directions
Wash and cut the potatoes into sticks. Try to make the cuts as even as possible so that they cook evenly.
Fry the potato sticks in the hot oil until golden brown and crispy. This is a crucial step for good fries, make sure there is enough oil and that it is hot enough.
Place the fries on a plate with paper towels to remove excess oil.
Meanwhile, fry the bacon in a pan without oil until crispy. Here comes my secret: let the bacon fat melt slowly over medium heat for maximum texture and flavor.
Once browned, place the bacon on absorbent paper to remove excess fat, then cut into small pieces.
Preheat the oven to 200°C.
Place the fries in a baking dish. Be sure not to crowd them so they can be evenly coated with the cheese and bacon.
Sprinkle the bacon and cheddar cheese on top of the potatoes. Don't skimp on these ingredients, they are what make these potatoes exceptional.
Bake for about 5 minutes or until the cheese is completely melted.
Remove the tray from the oven and sprinkle freshly chopped chives on top. It will provide a fantastic contrast to the salty flavor of the bacon and cheese.
