Healthy beet burgers
These beet burgers are colorful, nutritious and delicious. The beets bring an earthy flavor and juicy texture to the burgers. The combination of chickpeas and walnuts make them rich in protein. With their bright purple color, they are as appealing to the eye as they are to the palate. I have prepared them on several occasions and they are always a success.
Ingredients
- 1 can of chickpeas, drained and rinsed
- 2 Medium beets, peeled and grated
- 1⁄2 mug of chopped walnuts
- 1 Small red onion, chopped
- 2 cdas of olive oil
- 1 cdta cumin powder
- 1⁄2 cdta Of salt
- 1⁄4 cdta black pepper
- 1⁄2 mug Oatmeal
- 4 breads Hamburger

Directions
Preheat the oven to 200°C and line a baking sheet with aluminum foil.
In a food processor, combine the chickpeas, grated beets, walnuts, red onion and garlic. Process until all ingredients are well combined. As a tip, it is important not to over process to maintain some texture in the mixture.
Add the olive oil, cumin, salt and pepper. Process once more to combine.
Add the oatmeal and mix with a spoon simulating enveloping movements, which will help to give a slightly lighter texture to the mixture and prevent it from becoming too dense.
Form the mixture into 4 patties and place them on the prepared baking sheet. I recommend doing this with slightly moistened hands so that the mixture does not stick to them.
Bake for 30 minutes, turning the patties halfway through cooking to achieve an even browning.
Serve the burgers in the buns and add the toppings of your choice. My favorites are mustard, pickles and a fresh lettuce leaf.
