Fried plantains from Colombia
One of my favorite dishes is fried plantains (plantain eng). I tried it for the first time during my trip to Colombia and found it absolutely delicious. Now I prepare it very often because it's simple yet incredibly tasty. Plantains are a real treat when prepared properly. I share here my best tricks to get perfectly fried plantains.

- Oil for frying
- A pinch of salt

To prepare fried plantains, peel the plantains. When peeling, bear in mind that plantains are a little more difficult to peel than normal bananas. So be careful not to hurt your hands.
Cut the plantains into slices about 1 cm thick. If you make thicker slices, it will take longer for them to cook through.
Heat the oil in a frying pan. I recommend using enough oil so that the slices of plantain can float in it. It should be very hot before you add the bananas.
When the oil is hot enough, add the banana slices. It is important not to overcrowd the pan as this will lower the cooking temperature and prevent the bananas from cooking evenly.
Fry the plantain slices until they are golden on both sides. As plantains are naturally sweet, they caramelize quickly. So don't leave them in the oil for too long, otherwise they will burn.
Remove the fried plantains and drain them on a paper towel.
Sprinkle the fried plantains with a pinch of salt and serve.
